Once upon a time, I found Sriracha salt for popcorn, It was delightful but very expensive. I wanted to make my own version, and there are a couple of ways to make it. I’ll give you the basic recipe, then some variations at the end.
- 1 tbsp Hot chili flakes
- 1 tbsp Lime Salt
- 1 tsp sugar
Combine all 3 ingredients in a mortar or a spice grinder. Blitz or pound until well combined and powdery. This will make enough for many servings of popcorn.
If you want to get that fermenty flavor there are a few options. You can add a bit of vinegar powder. The best way is to save and dry the waste from straining skins and pulp from fermented hot sauce, and turn it into powder in a spice grinder.
